INGREDIENTS:
  • 1 (12 ounce) package vanilla wafers
  • 1/2 pound ground almonds
  • 4 ounces white chocolate
  • 1/4 cup tequila
  • 1/4 cup orange marmalade
  • 2 tablespoons light corn syrup

COOKING INSTRUCTIONS:

  1. Crush 1 box of  vanilla wafers until they resemble crumbs and then mix in with 1/2 lb ground blanched almonds
  2. In a separate bowl, melt four 1 oz squares of white chocolate 
  3. In a blender, process tequila, orange marmalade and light corn syrup until smooth
  4. Stir mixture in with melted chocolate and then pour slowly into crumb mixture
  5. Stir until well combined
  6. Shape into 1-inch balls and coat with sugar
  7. Store in refrigerator.
