Beetroot & Feta Burgers

*makes 4 patties
  • 1/2 cup wholemeal couscous
  • 1/2 cup boiling water
  • 2.5 cups grated beetroot
  • 1 small brown onion, grated
  • 2 cloves garlic, crushed
  • salt & pepper
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 egg
  • 100g feta, crumbled
  • 2 tbsp extra virgin olive oil
  • 125g hummus
  • 4 wholemeal seeded bread rolls, halved
  • 1 Lebanese cucumber, thinly sliced
  • mixed leaves
  • cherry tomatoes, halved or sliced

  1. Place couscous and boiling water into a large bowl and cover with plastic wrap. Set aside for five minutes or until once all the liquid has dissolved
  2. Fluff couscous with a fork and add beetroot, onion, garlic, salt, pepper, cumin, coriander, egg and feta
  3. Mix to combine
  4. Shape mixture into 4 patties and set aside
  5. Heat the oil in a large frying pan and cook patties on a low heat for 10-12 minutes each side or until firm
  6. To serve, spread hummus on the base of each roll and top with patty, cucumber, tomatoes and mixed leaves to form a burger
  7. Eat and enjoy!
