Healthy Chickpea Falafel

*serves 4
=approx. 380 calories per serve
  • 2 cans chickpeas
  • 1/2 cup fresh parsley, chopped
  • 1 carrot, grated
  • 1 onion, diced
  • 6 garlic cloves, mashed
  • 4 tbsp flour
  • 1 tsp paprika
  • salt and pepper to taste
  • 3-4 tbsp olive oil
  • SERVING SUGGESTION: Rocket leaves & balsamic dressing

1. Add chickpeas to food processor to make a paste
2. Place into large bowl and add all other ingredients (except oil)
3. Stir with wooden spoon until combined
4. Heat oil in large pan
5. Using hands, form patties with mixture
6. Place patties in pan and fry for 1-2 minutes on each side or until brown
7. Remove from pan
8. Serve with a generous serve of rocket leaves
9. Enjoy!
