Cauli Crust Pizza

INGREDIENTS:
200g cauliflower, blitzed in processor
1 egg white
10g grated parmesan
parsley, finely chopped
1 garlic clove, minced
PIZZA TOPPINGS OF CHOICE (My choice of toppings are listed below for macro purposes!)
100g chicken mince, pan fried (remove to make vegetarian)
15g cheddar cheese, grated
25g red capsicum, sliced
13g caramelised onions
20g mushrooms, sliced
25g tomato paste
INSTRUCTIONS:
1. Preheat oven to 220C
2. Line a large baking tray with baking paper
3. Process the cauliflower in batches until rice size pieces
4. Place in a microwave safe bowl and microwave, covered, on high for 5-7 minutes or until tender
5. Allow to cool
6. Combine egg white, parmesan, garlic and parsley in a large bowl
7. Add “cauliflower rice”and stir to combine
8. Spoon onto lined baking tin and bake for 25 minutes or until golden
9.Remove from oven and coat surface with tomato paste
10. Top with all your favourite pizza toppings (see ingredients list above for my choices)
11. Place back into oven for a further 10-15 minutes or until cheese has melted
12. Serve and enjoy!
