Chicken & Parmesan Potatoes

INGREDIENTS:
2 lb(s), Boneless Chicken Breast, halved
1 lb(s), Baby Red Potatoes, quartered
1/2 large brown onion
30ml Extra Virgin Olive Oil
5g Minced Garlic
Thyme Italian Herbs
Salt
Pepper
20g Parmesan Cheese, grated
INSTRUCTIONS:
Pour olive oil into bottom of crock pot
Add potatoes, onions and then chicken
Coat with garlic, Italian herbs, thyme, salt and pepper
Cook on low heat for 8 hours or high heat for 4 hours or until chicken is cooked through
Using a slotted spoon, place potatoes and onion to form a bed for the chicken on each serving plate
Top with chicken breasts and sprinkle parmesan cheese and additional herbs if desired
