Oatmeal Cookie Bites
Store in an airtight container for up to 4 to 5 days, or make a few batches and wrap tightly and freeze for 2 to 3 months.
Easiest snack & lunchbox prep ever!
INGREDIENTS:
6oz rolled oats (gluten free)
4oz crushed peanuts/pecan mix
1/2 cup honey or maple syrup
2oz dark chocolate chips (or DF alternative)
4oz dried cranberries
1/2 -2/3 cup natural peanut butter
1 tsp vanilla extract
1 tsp cinnamon
INSTRUCTIONS:
Grind nuts in blender (if not already crushed) and transfer into a mixing bowl
Add oats, chocolate chips, dried cranberries, cinnamon and mix together
Add peanut butter & vanilla and stir again
Add in honey just a little bit at a time, mixing between pours
Roll into small bite size balls and place on cookie tray (I put mine into mini muffin trays)
Place in fridge for at least 15 minutes
