Spinach, Feta & Cream Cheese Filled Chicken Breasts

INGREDIENTS:
500g chicken breast
10oz spinach leaves, boiled
30g low fat cream cheese
30g crumbled feta
5g garlic, minced
10g basil pesto
salt & pepper
INSTRUCTIONS:
Preheat the oven to 375 degrees F
Place boiled spinach, cream cheese, feta, garlic and pesto into a small bowl and stir to combine
Slice chicken breast in half (horizontally) to make two thin slices per breast
Carefully slice each 1/2 breast once again to create an opening at one side of each
Arrange in a shallow baking dish
Raise the top flap of each of the chicken breasts and spoon the spinach/cheese mixture into each
Place the top of each back down
Cover dish with foil and bake for approximately 20 minutes or until cooked through
Remove from oven
Serve & enjoy.
