Summer Chicken Bowl

INGREDIENTS:
2 tbsp fresh lime juice
1/2 tsp oregano
1/2 tsp onion powder
1/2 tsp cumin
1/2 tsp paprika
1 garlic clove, minced
salt & pepper to taste
300g chicken breast, boneless/skinless
100g mango, diced
100g black beans, drained
1/2 cup red onion, diced
100g shredded iceburg lettuce
feta cheese, crumbled
cottage cheese
fresh cilantro
hot sauce for dressing
INSTRUCTIONS:
Slice chicken breasts into evenly sized tenderloins
In a medium bowl, stir in lime juice, garlic, oregano, onion powder, cumin and paprika
Add chicken to bowl and stir to ensure it is coated in marinade
Cover bowl with plastic wrap and refrigerate
Meanwhile, make mango salsa by combining mango, red onion, garlic, lime juice and cilantro
Toss to combine and season with salt. Refrigerate until ready to use
Heat a large pan/skillet on medium heat and spray with olive oil
Add chicken to the pan/skillet and cook until golden on each side
Remove from heat and let rest 10 minutes before cutting into cubes
Serve chicken over a bowl of rice (if desired) with lettuce & kale leaves& black beans
Top with mango salsa, additional lime juice, feta, cottage cheese & cilantro
Drizzle hot sauce
