Turkey, Kale & Brown Rice Soup

*Serves 4-6

INGREDIENTS:

  • 1 pound ground turkey, 97% lean

  • 15-ounce can diced tomatoes

  • 1L Fat Free Chicken broth

  • 1 small bunch kale, coarsely chopped (about 4 packed cups)

  • 1 onion, diced

  • 1.5 cups brown rice

  • 1 tsp garlic, minced

  • paprika

  • italian herbs

  • onion pwder

  • salt & pepper

  • OPTIONAL: carrots, celery, sweet potato, hot sauce

INSTRUCTIONS:

  1. Throw all ingredients into a large pot or slow cooker

  2. Bring to the boil until turkey is cooked and rice softens (approx 15-20 minutes)

  3. Add additional kale leaves if desired

  4. Serve and enjoy

SERVING SUGGESTION:

  • additional rice

  • steamed greens

  • tortilla chips

  • avocado

  • crusty bread
