Turkey, Kale & Brown Rice Soup
*Serves 4-6
INGREDIENTS:
1 pound ground turkey, 97% lean
15-ounce can diced tomatoes
1L Fat Free Chicken broth
1 small bunch kale, coarsely chopped (about 4 packed cups)
1 onion, diced
1.5 cups brown rice
1 tsp garlic, minced
paprika
italian herbs
onion pwder
salt & pepper
OPTIONAL: carrots, celery, sweet potato, hot sauce
INSTRUCTIONS:
Throw all ingredients into a large pot or slow cooker
Bring to the boil until turkey is cooked and rice softens (approx 15-20 minutes)
Add additional kale leaves if desired
Serve and enjoy
