White Bean Turkey Chili

INGREDIENTS:

  • 1 1/4 pounds ground turkey

  • 50g diced red onion

  • 1/2 green capsicum, diced

  • 50g diced jalapeños

  • 1 tablespoon chilli powder or chilli flakes

  • 1 teaspoon bottled minced garlic

  • 2 tablespoons tomato paste

  • 2 teaspoons dried oregano

  • 1 teaspoon ground cumin

  • 1/4 teaspoon salt and black pepper

  • 2 (19-ounce) can cannellini beans, rinsed and drained

  • 2 (14.5-ounce) can diced tomatoes, undrained

  • 1 (14-ounce) can fat-free, lower-sodium chicken broth

  • 1/2 cup chopped fresh cilantro

INSTRUCTIONS:

  1. Heat a large frying pan or wok over medium heat

  2. Add chopped red onion, garlic and turkey mince to the pan

  3. Cook turkey for approximately 10 minutes, stirring occasionally to break it up

  4. Add capsicum, jalapeños and spices and combine

  5. In a large saucepan combine tomato paste, diced tomatoes, chicken broth and beans and bring to the boil

  6. Stir the turkey mixture into the large saucepan and simmer for 10 minutes

  7. Remove from heat

  8. Serve & enjoy.

  • parmesan cheese on top to serve

  • lime wedges

  • crusty bread (cheesy garlic or cornbread especially good!)
