Cajun Chicken with Smashed Sweet Potato & Corn Lime Salsa.
*Serves 4
INGREDIENTS:
SALSA:
1 cup corn kernels
1 small bunch coriander
1 tsp red chili flakes
4 spring onions
8 grape tomatoes
25g feta
spinach
1 lime, juiced
1 tbsp olive oil
SMASHED SWEET POTATOES:
800g sweet potato
1/3 cup broth
2 tbsp sweet chili sauce
CHICKEN:
4x Chicken breasts
1 tbsp Cajun seasoning
olive oil
INSTRUCTIONS:
Grill corn in a slightly oiled pan until browned
Wash the sweet potatoes, peel and dice. Add to a saucepan and bring to the boil.
Slice chicken into tenders, coat in cajun seasoning and place into an oiled frying pan. Flip after 3 or 4 minutes, until golden and cooked through.
Remove potatoes from the boil, drain then return to the pot. Smash until desired consistency then add the sweet chilli sauce.
Add charred corn into a bowl. Add spinach, feta, juice for one lime, chopped tomatoes, spring onion and chili flakes and mix to combine.
Serve the sweet potato smash on a board or platter with the chicken and fresh salsa on the side.
