Cajun Chicken with Smashed Sweet Potato & Corn Lime Salsa.

*Serves 4

INGREDIENTS:
SALSA:
1 cup corn kernels
1 small bunch coriander
1 tsp red chili flakes
4 spring onions
8 grape tomatoes
25g feta
spinach
1 lime, juiced
1 tbsp olive oil

SMASHED SWEET POTATOES:
800g sweet potato
1/3 cup broth
2 tbsp sweet chili sauce

CHICKEN:
4x Chicken breasts
1 tbsp Cajun seasoning
olive oil

INSTRUCTIONS:

  1. Grill corn in a slightly oiled pan until browned

  2. Wash the sweet potatoes, peel and dice. Add to a saucepan and bring to the boil.

  3. Slice chicken into tenders, coat in cajun seasoning and place into an oiled frying pan. Flip after 3 or 4 minutes, until golden and cooked through.

  4. Remove potatoes from the boil, drain then return to the pot. Smash until desired consistency then add the sweet chilli sauce.

  5. Add charred corn into a bowl. Add spinach, feta, juice for one lime, chopped tomatoes, spring onion and chili flakes and mix to combine.

  6. Serve the sweet potato smash on a board or platter with the chicken and fresh salsa on the side.

  7. Enjoy
