Turkey Taco Meatloaf

*Serves 4-6

INGREDIENTS:

  • 2 pounds ground turkey, 97% lean

  • 3/4 cup dry breadcrumbs

  • 15 oz. can petite diced tomatoes

  • 1/2 cup chopped onion

  • 2 teaspoons salt

  • 1 teaspoon cumin

  • 2 1/2 tablespoons taco seasoning

  • 2 eggs, beaten

  • 1 cup mild taco sauce, plus more for serving

  • Crushed tortilla chips + grated cheese (optional)

INSTRUCTIONS:

  1. Preheat oven to 400°F

  2. Line a loaf tin with parchment paper and set aside

  3. Add turkey, cheese (optional), breadcrumbs, tomatoes, onion, salt, cumin, taco seasoning, eggs into a large bowl, and stir to combine

  4. Set mixture into loaf pan, and brush meatloaf evenly with remaining enchilada sauce

  5. Brush with half of the taco sauce and bake for approximately 40 minutes

  6. Remove the meatloaf from the oven, add the remaining of the enchilada sauce and grated cheese (optional) then return to the oven for another 10-15 minutes

  7. Let meatloaf stand for a few minutes prior to slicing & serving

  8. Garnish with crushed tortilla chips (optional) or serve with your favorite sides & enjoy.
