Chicken Noodle Soup

*Serves 6
INGREDIENTS:
600g skinless, boneless chicken breast
200g carrots, diced
200g white onion, diced
200g celery, diced
200g thick egg noodles
6 cups low sodium chicken stock
15mL minced garlic
1/2 tsp parsley
1/2 tsp rosemary
1/2 tsp thyme
salt & pepper
INSTRUCTIONS:
Pour chicken stock into slow cooker
Add in chicken breasts and all herbs and spices listed above
Stir to combine before adding in celery, carrots & onions
Cover and cook on low heat for 6-7 hours
Remove chicken from the slow cooker and shredding two forks
Return shredded chicken to the slow cooker and add in egg noodles
Cover once more and cook for an additional 20-30 minutes until noodles are tender
Serve whilst hot.
