Nacho Casserole

INGREDIENTS:
1lb 93% lean ground turkey
200mL mild salsa
150g chili beans (drained)
250mL 0% fat greek yoghurt
2oz olives, sliced & drained
2 cups spinach leaves
100g onion, diced
100g green peppers, diced
200g fresh tomatoes, diced
100g mozzarella cheese, grated
20g parmesan cheese
INSTRUCTIONS:
Preheat oven to 350F (175C).
In a large pan, cook onion, green peppers & ground turkey over medium heat
Stir in salsa & reduce heat to a simmer
Simmer for 20 minutes, or until liquid is absorbed
Stir in beans until combined
Spray a 9x13 baking dish with olive oil spray
Spread turkey mixture on base of baking dish before spreading layer of greek yoghurt over that
Top yoghurt with olives & tomato
Sprinkle grated mozzarella and parmesan cheese on top
Bake in preheated oven for 20 minutes, or until hot and golden
Serve & enjoy.
