Jalapeno Tuna Quesadillas

*Serves 1 (3 wraps)
INGREDIENTS:
150g tinned tuna
3x whole wheat wraps
60g capsicum, diced
60g onion, diced
60g tomatoes, diced
60g shredded cheese of choice (I used sharp cheddar)
50g diced jalapeños
1 tablespoon chilli powder or chilli flakes
1 tbsp sugar-free BBQ sauce
spinach leaves
INSTRUCTIONS:
Preheat oven to 350F
Line baking tray with parchment paper
Lay wraps flat and bast evenly yet generously with Bbq sauce
Share the above ingredients evenly between the wraps, and begin layering each of the ingredients (except cheese) covering half of each wrap.
I layered mine in the following order:
- cheese, tuna, chill flakes, jalapeños, capsicum, onion, tomatoes, spinach leaves, cheeseFold over the wraps and press down so that it stay closed- helps when the final layer in step 4 is cheese :)
Bake for 10-15 minutes until cheese is melted
OPTIONAL: Place in sandwich press/ grill for extra crispinessRemove from oven
Serve over a bed of greens or any sides of your choice & enjoy.
