Banana Coconut Muffins

INGREDIENTS:
1/3 cup melted coconut oil
1/2 cup honey
2 eggs
3 mashed bananas
1/4 cup milk
1 tsp baking soda
1 3/4 oat flour (ground oats)
3/4 cup shredded coconut
1 tsp vanilla extract cinnamon
INSTRUCTIONS:
Preheat oven to 325F degrees (165C)
Line muffin tray with either patty pans or lightly grease with spray olive/ coconut oil
In a large mixing bowl, add the oil and honey and mix together using a fork
Add the eggs and beat well, then whisk in the mashed bananas and milk
Add in the baking soda, vanilla extract, coconut and cinnamon, and stir to combine
Finally, stir in the oats/flour until evenly coated and combined
If you’re adding any additional mix-ins, gently fold them in now!
Spoon the batter into the muffin tray and top with sliced bananas, cinnamon, coconut, crushed nuts or cranberries (anything goes!)
Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean
Remove fro oven and allow muffins to cool on a wire rack
Best served warm with peanut butter & coffee - just saying :)
