Savory Cheddar Muffins

*makes 12INGREDIENTS:
- 1 3/4 cups all-purpose flour 
- 1 1/2 tsp baking powder 
- 1 tsp baking soda 
- 1/2 tspn salt 
- 1/2 tsp pepper 
- 1/4 cup butter, melted 
- 1 egg, lightly beaten 
- 1 cup milk 
- 1 garlic clove, minced 
- 3/4 cup cheddar cheese, finely shredded 
- 1/4 cup grated parmesan 
- 1/4 cup diced tomatoes 
- 1/4 cup Szagorskis Hot & Sweet Peppers 
- Italian herbs & chives to taste 
INSTRUCTIONS:
- Preheat oven to 350F (175C) 
- Spray 12 muffin cups with cooking spray 
- Mix flour, baking powder, baking soda, salt, pepper & spices in a large bowl 
- In another bowl, stir together the butter, egg, milk, and garlic until well blended 
- Mix the flour mixture into the milk mixture, adding about 1/2 cup at a time, until completely combined 
- Fold in the Cheddar cheese, Parmesan cheese, tomatoes & peppers 
- Pour batter into the prepared muffin tray 
- Bake in oven for approximately 20-30 minutes or until golden 
- Allow muffins to cool slightly before removing from muffin cups 
- Serve warm or chilled- refrigerate leftovers.
