Savory Cheddar Muffins

INGREDIENTS:
1 3/4 cups all-purpose flour
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tspn salt
1/2 tsp pepper
1/4 cup butter, melted
1 egg, lightly beaten
1 cup milk
1 garlic clove, minced
3/4 cup cheddar cheese, finely shredded
1/4 cup grated parmesan
1/4 cup diced tomatoes
1/4 cup Szagorskis Hot & Sweet Peppers
Italian herbs & chives to taste
INSTRUCTIONS:
Preheat oven to 350F (175C)
Spray 12 muffin cups with cooking spray
Mix flour, baking powder, baking soda, salt, pepper & spices in a large bowl
In another bowl, stir together the butter, egg, milk, and garlic until well blended
Mix the flour mixture into the milk mixture, adding about 1/2 cup at a time, until completely combined
Fold in the Cheddar cheese, Parmesan cheese, tomatoes & peppers
Pour batter into the prepared muffin tray
Bake in oven for approximately 20-30 minutes or until golden
Allow muffins to cool slightly before removing from muffin cups
Serve warm or chilled- refrigerate leftovers.
