Turkey Meatloaf

INGREDIENTS:

  • 1 tablespoon olive oil

  • 1 large onion, chopped (1 1/2 cups)

  • 2 garlic cloves, minced

  • 3/4 teaspoon salt, divided

  • 1/2 teaspoon pepper, divided

  • 1.5 tablespoons Worcestershire sauce

  • 1/3 cup fat-free, less-sodium chicken broth

  • 3 tablespoons ketchup, divided

  • 2 pounds ground turkey, 97% lean

  • 3/4 cup dry breadcrumbs

  • 1 large egg, lightly beaten

  • 1 large egg white, lightly beaten

INSTRUCTIONS:

  1. Preheat oven to 375°F

  2. Heat oil in saucepan over medium heat

  3. Add onion to pan and cook through until soft. Stir in garlic, salt and pepper, Worcestershire sauce, broth, and 1 tablespoon ketchup

  4. Stir to combine before transferring mixture to a large bowl

  5. Add turkey, breadcrumbs, egg and egg white to bowl, and combine

  6. Cover a loaf baking tray with aluminum foil, and coat lightly with olive oil spray

  7. Set mixture into loaf pan, and brush meatloaf evenly with remaining 2 tablespoons ketchup

  8. Bake for approximately 45 minutes to an hour

  9. Let meatloaf stand for a few minutes prior to serving

  10. Serve with your favorite sides & enjoy.
